We don't have any important symbolism for cows. Pegasi and flowers are the most significant symbols of Neo Verona.

I think it is about the ruling class. We practice falconry and only the king may use an eagle.

Um. The only difference in Neo Verona was given by the size of the wings of pegasi and the color. A white pegasus was the rarest of all steeds. The peasants and poor people couldn't afford even one with small wings.

This has changed! For the best!
